Weekly Menu {April 14-21}

Happy Day to all of you!

Yikes…I can hardly contain my excitement and anticipation…I am leaving for SNAP! in Salt Lake City, Utah!! in just 3 days…3 days!!  I will be soaking up all the creativity I possibly can…Don’t worry, I’ll be sharing oodles of pictures via Facebook and Instagram.  Hope you’re following along!

Since I will be Out of Town most of the week, The menu is short and simple.

**Clean out the fridge!**

We had steak tonight with leftovers, so probably steak salad one night.

Lots of veggies to eat up, so a stir fry or pasta with veggies the other night.

When I come home Sunday, I highly doubt I will want to spend time in the kitchen, so dinner will be something really easy, like Pizza…Momma does not want to cook her first afternoon home!

Hope you all have a fantastic week…I KNOW I will…Cannot wait to share it all with you!!  Have I mentioned how excited I am?!!

P.S. Meal planning last week worked out great…I didn’t stick to the plan exactly, but it was so nice to have ideas and all the food ready to go.  I’ll have a much better plan next week!  Promise! 🙂

Weekly Menu {April 7-13}

Happy Sunday Friends!  I hope you are blessed with a beautiful day and time spent doing something you love.  We have a full day, but a FUN day!  Off to church in the morning, then home for quick naps and off to a Birthday Party and BBQ to celebrate one of our best friends turning the big 5.  There’s going to be a Bounce House, so the boys are uber excited!

Today, I am starting something new on the blog…new for me.  One of my favorite bloggers, Leslie at Moore Than A Mommy, posts a menu at the start of each week…Each week,  I tell my husband I need to do the same.  Plus, she has great dinner ideas…Go check it out!  Instead, I plod through the week scrambling to thaw meat at 3:00 or later…Ugh!  So, this week I am sharing with all of you what we will be having for dinner this week in hopes that I will stick to it.

This is a really busy week for me…So busy that I will really only be home one night!  Mr. Kriegerchick will be in charge the other nights.  We’re keeping it simple this week to make it easy on all of us!

Sunday:  Birthday BBQ

Monday: Chicken Club Pizza with veggies & dip (Momma has Bunco)

Tuesday: Spaghetti with meat sauce with side salad (Momma has Book Club)

Wednesday: Dinner at church

Thursday: *Mediterranean Wedge Salad

Friday: Crockpot Chicken Caesar Salad Sandwiches, chips and fruit (Momma has a Girls Night)

Saturday: Grilled steaks or pork chops, Smashed potatoes and Steamed broccoli

*Denotes a NEW recipe!  I’ll report back and let you know how it turns out.  It looks delicious…and easy!

Homemade Coffee Creamer {3 ingredients}

Welcome to One {Frugal} Chick Friday!  

I am trying something new where each Friday I will share one (or more) of my tips for living frugally.  If this is a topic you are interested in, you will LOVE Friday on the blog!

Hope you are all nice and toasty…It’s freezing here and I am snowed in!  Still waiting for Mr. Kriegerchick to make it home to plow the drive.  It snowed 10 inches yesterday, which is a record for our area this time of year.

Not sure about you, but when it’s cold (or even if it is hot) I love to curl up on the sofa with a good read and a hot cup of coffee.  During my teaching days (before children) that is how I spent many a snow day afternoon…

Ahhh…pause while I reminisce…

Everyone takes their coffee differently…I prefer mine black.  Boring, I know.  That’s only in the morning…If I have a cup (or 2) in the afternoon or evening, I like a yummy flavored creamer…Let’s just call it dessert!

Creamer is expensive and I use quite a bit per cup…maybe more than a serving according to the bottle.  So, I decided to make my own.  Who knew it is sooo easy and inexpensive and uses ingredients most of us keep on hand! Yeah. Yeah. Yeah!

{3 ingredient} Homemade Coffee Creamer I

Homemade Coffee Creamer

{3 ingredients}

1 cup Skim Milk

1/3 – 1/2 can Sweetened Condensed Milk

1 tsp. Pure Vanilla or Peppermint

Pour all ingredients into a sealed jar or bottle and shake to combine.

Note: The first time I made this it was way too sweet, so I adjusted the measurements to my liking.  If you want it sweeter, just add more Sweetened Condensed Milk.  I have made both the vanilla and peppermint versions…YUM!  I used Pure Mexican Vanilla and Pure Peppermint extract, which have a stronger flavor than extracts.  Keep that in mind when you make yours.  I am sure there are many other flavor combinations…Love to hear what you come up with!

I shake mine with each use and only keep until the expiration date on the milk.  It may keep longer, but made in a small batch,= mine will never last that long! 🙂

Cost breakdown: 1 cup Milk = $.20, 1/2 can Sweetened Condensed Milk = $.64 …Add in pennies for the flavoring and it is under $1.00 to make the same amount as a small creamer from the grocery store.

This is also a great way to re-purpose a bottle…I used a small Shatto milk bottle…A double batch of creamer fits perfectly in a large Shatto milk bottle, but makes too much for me.
