Hello friends…Anyone else trying to eat healthier this year? Yeah, me too. Unfortunately, I have a GIANT sweet tooth and almost ZERO willpower. Sorry if you have the same problem. I NEED something sweet everyday, so I am always on the look out for sweet treats I do not have to feel guilty about eating.
I came across this recipe in a HyVee Seasons magazine {the free magazine put out by HyVee grocery store}. Changed it up a bit to use what I had on hand…Sweet and Healthy…No worries about willpower! Eat as many as you want…Take them with you as a snack…Yum!
Chocolate Cherry Bites {no bake}
Ingredients:
1 cup old-fashioned oats
1/2 cup whole wheat flour (or almond flour)
1/4 cup ground flax seed
1/4 cup honey
1 tsp. vanilla
1/2 cup peanut butter (or almond butter)
1/2 cup mini chocolate chips (or dark chocolate chips)
1/2 cup craisins (or dried cherries)
How To:
Combine oats, flour and flax seed in a medium bowl. In a separate small bowl, stir together honey, vanilla and peanut butter. Using a spatula, combine the two mixtures and add in the chocolate chips and craisins. Refrigerate 30 minutes before shaping into small balls. Store, covered, in the refrigerator.
Tip: I freeze a few in snack bags for on-the-go snacking.
